A restaurant familiar to many residents in the High Country is coming to Jefferson.
Coyote Kitchen, which has been a Boone staple since its inception, is opening a second location in the spot previously occupied by J and J Chop House, at 327 E. Main Street, in Jefferson.
Jaime Whitehead, who owns and operates the restaurant with her husband, Ben, said the goal is to be open by late spring.
“There’s a need for Coyote there,” Whitehead said. “We offer something no one else in the area offers.”
According to its website, Coyote Kitchen specializes in “Southwest Caribbean Soulfood.” The restaurant offers a wide assortment of burgers, sandwiches, burritos, tacos and salads, among other things.
“We used to live in West Jefferson,” Whitehead said. “So, knowing a lot of people in the community, they asked us to bring it there.”
